Medicinal sandwiches!

Mixing medicine with munching…

Part of my job is helping people overcome prediabetes, insulin resistance and fatty liver disease. When I was told I was prediabetic myself I was mortified, and I wrote about it on here somewhere…

As well as being embarrassed [how could this happen to me?] I was catapulted with considerable urgency to reversing it. Since I have reduced my carbs intake and take a range of medicinal herbs I can keep myself healthy, even with such a strong family history of type 2 diabetes. I check my blood sugar regularly and it is no longer in the prediabetic range.

One of my tools alongside diet was making myself fenugreek capsules and taking 2-3 a day, which I found allowed me to sneak in a bit of toast from time to time. I made a lot of these capsules because I like toast very much. And roast potatoes. And flapjack dipped in chocolate. And so on…

And then my capsule machine broke!

But, my friends, I have come up with a cunning plan that allows me to mix medicine with munching and avoid the tediousness of filling capsules by hand.

This is not my recipe, but I changed it a bit to allow me to add a dessert spoon of fenugreek powder.

100g dried chickpeas drained and rinsed [soaked overnight but not cooked]

100mls water

1 tablespoon of olive oil

1 tablespoon vinegar

2 tablespoons of psyllium husk

1 flat teaspoon of bicarbonate of soda

1 flat dessert spoon of fenugreek powder

Sprinkle of paprika

Pinch of salt

Pop into a nutribullet type thing and whizz till a sort of cake mix consistency. Shape into 5 soft balls and cook on 180°C/355°F for 40mins. You must make sure you heat the oven first.

I sprinkle mine with sesame seeds. They are yum…

Somebody made the comment that I could use gram flour [chickpea flour] instead.

So, has anybody got a recipe for that?
